Epefania "Ephie" Osita Fields was born in Quezon City, Philippines, to Patricio and Cristina Osita. The third of nine children, she began working in her parents' store at a young age, where she learned the value of hard work and service. From an early age, Ephie carried a deep desire to care for others. When asked in elementary school what she wanted to be when she grew up, she answered without hesitation: a nurse.
Her journey in life took her far from home. Ephie moved to Germany as a young woman, where she embraced new adventures—working in food service, as a nanny, and in other roles—while also learning a third language. It was there that she met Private Kenneth Fields Jr., whom she lovingly referred to as "my soldier" and "my tall, dark, and handsome." They fell in love and were married on July 1, 1983. Together, they built a family, welcoming two sons, Kenneth III and Christopher. After years of travel with the Army, they eventually settled near Taft, Oklahoma, where they made their home.
Ephie worked for many years at Furr's Cafeteria in Muskogee before returning to the calling God placed on her heart. She pursued studies at Carl Albert, Connors, and Tulsa Tech Colleges, preparing herself to serve others in health care. Her dream was realized when she began her career as a nurse at St. Francis Hospital, where she cared for patients with compassion and pride, always striving to give her very best.
Her faith was central to her life. Ephie became a devoted member of St. Joseph Catholic Church in Muskogee, where she sang joyfully in the choir, sharing her love of music as a way to honor God.
Outside of work and church, Ephie found joy in cooking and gardening. Her homemade dishes were cherished at family gatherings, church functions, and work potlucks, while her garden blossomed with colorful flowers that reflected her vibrant spirit.
Epefania was preceded in death by her father, her brother Norberto Osita and her sister Eufemia Osita.
As Epefania has moved on to be with god, her light shines on, reflected in the hearts and minds of those who will forever cherish the warmth of her memory: her husband, her mother, two sons, four sisters - Estrella Pana (Boyet), Erlinda Osita, Belinda Osita, and Editha Cacayan (Elmer), two brothers - Rolando Osita and Nelson Osita (Arlene) and many nieces, nephews, and cousins.
Funeral Mass is scheduled, Saturday, September 6, 2025, 11:00 a.m., St. Joseph Catholic Church Parish Hall, 321 N. Virginia Street, Muskogee, OK; with Father Alessandro Calderoni delivering the message.
Visitation will be Friday, September 5, 2025, 1:00 p.m. until 4:00 p.m. A Rosary is scheduled at 6:00 p.m.
Interment will be Tuesday, September 9, 2025, 11:00 a.m., Ft. Gibson National Cemetery, Ft. Gibson, OK
